Nakaya's commitment begins with the purchase of dried bonito. All raw materials are locally sourced. We purchase the dried bonitos from reliable Japanese suppliers who procure the fresh bonitos from Japanese fishing boat. Since the overseas processed wood are used for smoking, the aroma of the smoked bonito blocks will inevitably be different .

Smoked Bonito Block is a "living thing". Fish vary in size, water content, and fat content. The quality of the smoked bonito block differs according to the quality and manufacturing process. But Nakaya will never compromises on quality. We only purchase smoked bonito block that are of the same size and of high quality. Therefore, there are some items that cannot be procured in large quantities. Before procuring the bonito blocks, we will shave the blocks to extract the stock and have a taste test to ensure quality of the product.

A dish that is often enjoyed with the eyes, completed when served on a plate. The history of Kaga cuisine is not complete without the mention of Kaga ceramics and Wajima lacquerware . For example, a typical Kaga dish, Jibuni, is served in special lacquerware called Jibuwan, a beautifully crafted bowl which enables one to enjoy the dish at ease. Another example is the steamed sea bream, which is served beautifully on a large kutani plate at celebratory occasions.

Dried Bonito flakes (Kezuribushi) has not only impressed culinary connoisseurs as a flavor behind the luxurious delicacy worthy of the Kaga's Aristocrats , but has also delighted the tastes of the ordinary people as a soup stock for soba restaurants and hot pot restaurants in popular cities. The neighborhood of Asanogawa Higashi Chaya District, which still retains its old-fashioned atmosphere, is lined with casual and high end restaurants that you can try out those dishes.

If cooking and tableware are art, flakes of dried bonito may be said to be an art form as well. It has played a part in food culture as the best companion for cooking ingredients and as a flower that gracefully decorates the presentation.
