Our products are manufactured using a controlled manufacturing process. We are fully equipped with a variety of equipment to enable us to manufacture products that meet customer requirements, including the thickness of the flakes, shape, composition, and content. Bonito Flakes "Kezuribushi" is a very delicate natural ingredient , in order to maintain high quality, each pack of flakes has to be carefully handled by skilled craftsmen by hand.
Adjusting the blade
The thickness of the shaving blade is adjusted accordingly for each product. Accurate adjustment is extremely difficult, and the thinner the product, the more delicate and fine adjustments are required. This important process requires the hand of skilled craftsmen as it affects the end product.
Manufacturing process

Brush Cleaning
Careful removal of small fish bones and foreign objects that are attached to the surface.

Steam stew
Steam is used for sterilization and to add moisture to the Dried Bonito Blocks for ease of processing. The time and temperature are controlled by a computer and adjusted accordingly to the type and quality of the fish.

Cutting process
The thickness of the flake ranges from 0.01mm to 1mm. The shaving machine has 14 blades attached to a disk that rotates at high speed to slice the flakes from the dried bonito blocks.

Packaging process
Once the quality of the product is ascertained, the product will be quickly and carefully packed.

Gas infusion
To preserve its aroma and flavor for a long time and to prevent the quality of the Bonito flakes from deteriorating, bagged bonito flakes are quickly filled with nitrogen gas and sealed.

Metal detector
We perform a check to see if there are any metal foreign objects mixed into the product.
